This is one delicious dish!
First start out by boiling your water for your noodles. While you wait for your water to come to a boil, fry up some bacon.
Put macaroni in the water as soon as it comes to a rolling boil. cook noodles for 8-10 min.
Cut up one medium onion, and two or three cloves of garlic.
take cooked bacon out of the pan and set it aside to cool.
get rid of some of the bacon grease and add a little bit of olive oil to the grease.
Place onions in the pan with the oil and grease and cook them for a min or so, then add the garlic.
Let these cook up for a little bit.
Now you can add really whatever you want. I added one bag of frozen spinach (thawed) and one can of Diced tomatoes. (you can add fresh tomatoes if you want too...) Salt and pepper, and mix the cooked noodles with the tomato/spinach mixture and then chop up the bacon and add that.
Add about a 1/2 cup of Parmesan cheese (not the crappy stuff in a green can...real Parmesan) and about a 1/2 cup of whatever kind of cheddar cheese you prefer.
Mix everything together well and place in a baking dish and cook at 350 for about 30-40 min.
(stir the pasta halfway through cooking to make sure your top noodles dont dehidrate)
