The other morning, I made some of my most favorite little breakfast treats ever! Popovers have always been something that reminds me of my mom's home cooking. The way it worked in our house growing up was Mom's way or the highway. As a single mother of two, I am always amazed of how she ever did it. She is someone that has endless amounts of gusto and never stops. With that being said, often times we were woken up in the morning by clanging of pots and pans coming from the kitchen and the wafting smells of coffee and whatever goodness was being made.
These popovers were always a treat to be had. The popovers would come out of the oven like magic, with their giant pockets of air just waiting for butter and some lovely fruit preserve (made by my mom), to be spread around and enjoyed.
These are not a particularly difficult thing to be made, however they have been a baked item that I have always feared...apparently for no logical reason what-so-ever. So here we go!
You either need to have a popover pan...
...or you need to have 6 glass or ceramic custard cups...
Either one works fine and you can find these online through Amazon.com, or I have seen them at Bed, Bath and Beyond and other likely places to find a plethora of kitchen gadgets and gizmos.
Always keep an eye out for things like this at thrift stores or garage sales! I find my best kitchen goodies this way.
Growing up, mom always had a popover pan, and now that I'm the one cooking, I am lucky enough to have 6 custard cups...
Lets get cooking---
Preheat the oven to 450 F. , and grease your cups or pan well.
In a bowl mix eggs, sifted flour, milk, salt and some really good vanilla extract together. Don't get too crazy with the mixing.
Take your mixture and fill the cups half way.
Bake at 450 F for 20 minutes. Reduce heat to 350 and continue baking for 10 minutes.
These are best served right out of the oven with a jam or jelly, or some honey and butter.

2- Eggs (room temperature)
1C- All purpose flour
1C- Milk
1/2tsp- Salt
1tsp- Vanilla
