Fantasticly fried fish :D YUMMY


So I know I said that the mashed potatoes were next...but I lied...

This fish was sorta spur of the moment type of thing, but ooooooh so tasty!

Alrighty so you can get fresh or frozen fish...I use tilapia, just cause I really like white fish.. (salmon would have a different cooking length...usually a lot longer than white fish)
Now if you have frozen fish, you have to thaw it out. If it is packaged fish, keep it in the package and just set it in the sink and cover with water and let the thawing happen on its own. Otherwise you can just put it in the fridge and let it thaw for an hour or so...it usually doesnt take very long with fish.
Hint: please! PLEASE! Thaw your frozen foods in cool water...This is a slower method of thawing, but it is less likely of your produce/meats/fishes getting spoiled and nasty. Never thaw foods in hot water!

When you fish is thawed get a pan going hot, prolly on med-high heat.
Melt butter (2 Tbs should do it) in the hot pan.

lightly coat your fish in flower and season with salt and pepper...I also like to use lawrey's season salt instead of the salt and pepper sometimes too...

When your butter is just starting to bubble (dont burn your butter!) put your fish in the pan and leave it alone for about 2 min on one side. Dont touch it....dont do it! Hint: not touching the fish prevents it from sticking to the pan.
Then when about 2 min is up, shake your pan a little to make sure your fish isnt stuck to the bottom...with all that butter it should flip nicely.
Get the otherside cooking for another 2 min. and it should be done!

White fish is sorta difficult to tell whether it is done or not, but usually if you poke it and it doesnt give to the poking...it should be good.

And youre done! Thats it!
Serve it with some asparagas or mashed taters and you have yourself a wonderful meal...simple!

That mom life, Yo!

So in the past month I have officially become a mother of two.  Our beautiful baby girl is no longer a baby and will be three years old come November.  Our newest of kin is a wonderful little baby boy and is officially one month old as of today. It has been a while...

  While I sit here at home trying to keep a two-and-a-half year old occupied, as she resists her nap, I struggle with the 20+ extra pounds hanging around my 37-weeks-of-pregnant-stomach...why not get back on the blog action.  After not sleeping from all of the lovely symptoms and struggles of being so huge and pregnant, I offered up some of my limited morning time this week to continue work at a summer daycare in town (and heck, why not?...we could use the money).   Exhausted after chasing after 35 kids this morning, I come home to a semi-functioning house where my amazing hubby is doing everything he can to keep his tired eyes open and entertain our beautiful daughter. Both of whom are still in their pajamas, and remnants of a rushed breakfast sit on the coffee table, while a movie plays on the TV.  I wonder, how we will ever survive with another child added to our chaos.   The energy that I have left from the morning goes into picking up the house and runnin...

Modpodge the WORLD!

I LOVE Modpodge! Recently I was sitting with my dear friend Laura, and we were discussing some great crafty ideas to keep us busy. Modpodgeing is an absolute addiction! As I sat and decided what my next adventure with this paste would be, I membered an old pair of work shoes that are just too scummy to wear. What better way to spiff them up than to use Modpodge! I pulled out my newly organized fabric collection and started cutting and piecing together this awesomely colorful shell for a pair of dull old Chucks. I finished one and am thrilled with the outcome! Who needs to spend hundreds on shoes?! These shoes rock my world! I will post a picture as soon as I can sit down and get working on the other one!
